  • 1/2 cup butter, softened
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1 1/2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine oats, flour, butter, salt, baking soda, and brown sugar until coarse crumbs form.
  3. In a saucepan over medium heat, mix rhubarb, granulated sugar, cornstarch, and water. Cook until rhubarb is soft and clear (about 5-10 minutes). Stir in vanilla and let cool slightly.
  4. Press most of the crumb mixture into an 8×8-inch greased baking dish. Pour cooled rhubarb filling over the base and sprinkle remaining crumbs on top.
  5. Bake for 30-40 minutes until golden brown and set. Allow to cool completely before cutting into bars.
