Ingredients
- 1 cup old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup butter, softened
- 1/8 teaspoon salt
- 1/8 teaspoon baking soda
- 1/2 cup brown sugar
- 1 1/2 cups chopped rhubarb
- 3/4 cup granulated sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine oats, flour, butter, salt, baking soda, and brown sugar until coarse crumbs form.
- In a saucepan over medium heat, mix rhubarb, granulated sugar, cornstarch, and water. Cook until rhubarb is soft and clear (about 5-10 minutes). Stir in vanilla and let cool slightly.
- Press most of the crumb mixture into an 8×8-inch greased baking dish. Pour cooled rhubarb filling over the base and sprinkle remaining crumbs on top.
- Bake for 30-40 minutes until golden brown and set. Allow to cool completely before cutting into bars.
