  • 2/3 cup barbecue sauce
  • 2/3 cup teriyaki sauce
  • 3 cloves garlic (minced)
  • 1 tablespoon freshly grated ginger
  • 2 pounds boneless skinless chicken breasts (cut into 1-inch chunks)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (cut into 1 1/2-inch pieces)
  • 1 sweet onion (cut into 1 1/2-inch pieces)
  • 2 tablespoons canola oil
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. In a medium bowl, mix barbecue sauce, teriyaki sauce, garlic, and ginger. Set aside half for later.
  2. Marinate chicken in the remaining sauce for at least 2 hours.
  3. Thread marinated chicken, pineapple, bell pepper, and onion onto skewers.
  4. Preheat grill to medium heat.
  5. Grill skewers for about 10 minutes, turning occasionally until chicken reaches an internal temperature of 165°F. Brush with reserved sauce during the last minute.
