  • ½ cup bourbon
  • ⅓ cup low-sodium soy sauce
  • ½ cup packed light brown sugar
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • Fresh ginger, grated
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons cornstarch
  • 23 tablespoons neutral oil
  • 1 tablespoon cornstarch (for slurry)
  • 2 tablespoons cold water
  • 23 green onions, thinly sliced
  • Toasted sesame seeds (optional)
  • Steamed rice, cauliflower rice, or lettuce cups
  • Steamed broccoli

Instructions

  1. In a bowl, whisk together bourbon, soy sauce, brown sugar, honey, rice vinegar, garlic, and ginger. Set aside.
  2. Preheat your griddle to medium-high heat.
  3. Pat chicken dry and season with salt and pepper. Lightly coat with cornstarch.
  4. Add oil to the griddle; sear chicken in batches for 6–8 minutes until fully cooked.
  5. Pour prepared sauce onto the griddle; let simmer for 2–3 minutes.
  6. Stir in cornstarch slurry to thicken the sauce; return chicken to the griddle and coat with sauce.
  7. Garnish with green onions and sesame seeds as desired.
