  • 1/2 cup almond butter (or any nut/seed butter)
  • 2 large ripe bananas
  • 1/2 cup blueberries

Instructions

  1. Preheat the oven to 350°F (180°C) and line an 8 x 8-inch baking pan with parchment paper.
  2. In a mixing bowl, mash the ripe bananas and combine them with rolled oats and almond butter. Optionally add honey or maple syrup for sweetness.
  3. Fold in half of the blueberries. If the mixture is too thick, add a splash of milk; if too thin, mix in more oats.
  4. Transfer the mixture to the prepared pan and top with remaining blueberries and any additional mix-ins like walnuts.
  5. Bake for about 15 minutes until edges are golden brown and a skewer inserted into the center comes out clean.
  6. Cool for 15 minutes in the pan before transferring to a wire rack to cool completely before slicing.
