  • ¼ cup sugar
  • ¼ cup brown sugar
  • Zest from 1 lemon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 8 ounces cream cheese (softened)
  • 1 egg yolk
  • â…“ cup sugar (for cream cheese filling)
  • 1 teaspoon vanilla extract
  • 2 boxes puff pastry sheets
  • 1 egg (for egg wash)
  • ¼ cup powdered sugar (for dusting)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine blueberries with sugars, lemon zest, juice, and cornstarch. Cook over medium heat until thickened; let cool.
  3. Beat softened cream cheese with egg yolk, sugar, vanilla, and lemon juice until smooth.
  4. Roll out one puff pastry sheet on a floured surface; layer half the cream cheese mixture followed by half the blueberry mixture. Top with another pastry sheet.
  5. Cut slits in the top layer for steam release and brush with egg wash.
  6. Bake for approximately 20 minutes or until golden brown.
  7. Dust with powdered sugar before serving.
