  • 16 oz lo mein noodles
  • 2 cups shiitake mushrooms (sliced)
  • 1 cup Chinese cabbage (shredded)
  • 1 cup carrots (julienned)
  • 1 large onion (chopped)
  • 1 tablespoon brown sugar (packed)
  • 2 tablespoons soy sauce (low sodium)
  • 2 tablespoons dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon hoisin sauce
  • 1 teaspoon ground black pepper
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger (minced)
  • 3 cloves garlic (minced)
  • 4 tablespoons olive oil
  • 3 green onions (chopped)

Instructions

  1. Cook lo mein noodles according to package instructions; drain.
  2. In a bowl, whisk together brown sugar, soy sauces, oyster sauce, hoisin sauce, ground black pepper, and sesame oil; set aside.
  3. Toss chicken with soy sauce, ginger, and garlic in a separate bowl.
  4. Heat olive oil in a wok over medium-high heat; cook chicken until browned (about 5 minutes). Remove from wok.
  5. Stir-fry mushrooms, cabbage, carrots, and onion in the same wok for about 1 minute.
  6. Return chicken to the wok along with cooked noodles and prepared sauce; toss everything until evenly coated.
  7. Serve hot garnished with chopped green onions.
