  • 12 medium zucchini (about 1½ cups shredded)
  • 2 garlic cloves
  • Fresh chives
  • Mayonnaise
  • Fresh cilantro

Instructions

  1. Make the cilantro sauce by blending cilantro, garlic, mayonnaise, cottage cheese, and vinegar in a food processor. Refrigerate to thicken.
  2. Grate zucchini, sprinkle with salt, then squeeze out excess moisture using paper towels.
  3. In a large bowl, mix the grated zucchini with ground chicken, minced garlic, chives, salt, and pepper. Form into six patties.
  4. Heat oil in a nonstick skillet over medium heat; cook each patty for about 4 minutes per side until browned.
  5. Serve warm with the cilantro dipping sauce.
