  • 1/4 cup canola oil (or melted coconut oil)
  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and grease a 9-by-5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt; set aside.
  3. In a large bowl, mix eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
  4. Gradually stir in the dry ingredients until just combined; fold in shredded zucchini and 3/4 cup of chocolate chips.
  5. Pour batter into the prepared pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50–60 minutes until a toothpick inserted into the center comes out mostly clean.
  7. Let cool in the pan for 15 minutes before transferring to a wire rack to cool completely before slicing.
