  • 1/4 cup diced sun-dried tomatoes
  • 3 garlic cloves (minced)
  • 68 cups chicken broth
  • 1 cup heavy whipping cream
  • 2.53 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken, season with Italian seasoning, salt, and pepper; brown for about 4-5 minutes.
  2. Add carrots, celery, onions, sun-dried tomatoes, and garlic; cook until vegetables are translucent (3-4 minutes).
  3. Sprinkle flour over the mixture and stir to combine. Optionally add tomato paste.
  4. Gradually whisk in the chicken broth while stirring to prevent lumps.
  5. Bring to a boil, add pasta and additional seasoning; reduce heat and simmer until chicken is cooked through (about 20 minutes).
