  • 1 small yellow onion
  • 2 garlic cloves
  • 2 1/2 cups low-sodium chicken broth
  • 2 (4 oz) cans diced green chilies
  • 1 1/2 teaspoons ground cumin
  • 2 (15 oz) cans great northern beans
  • 1 cup sour cream
  • 2 heaping cups cooked shredded chicken

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped onion for 3–5 minutes until softened; add minced garlic and cook for another 30 seconds.
  2. Stir in chicken broth and diced green chilies, followed by the spices: cumin, cayenne pepper, oregano, paprika, lime juice, salt, and pepper.
  3. Rinse and drain great northern beans; puree half with a splash of broth in a food processor for creaminess.
  4. Add both pureed and whole beans back to the pot along with corn; simmer for 15–30 minutes until heated through.
  5. Stir in sour cream and shredded chicken until combined; serve hot with desired toppings.
