  • 1 pound lean ground beef (90%)
  • 1 packet taco seasoning
  • 3/4 cup red enchilada sauce
  • 2 1/2 cups Oaxaca cheese (or Mexican blend)
  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 450°F (232°C).
  2. In a skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in taco seasoning and red enchilada sauce; simmer.
  3. Warm corn tortillas in a damp paper towel in the microwave for 30-60 seconds until pliable.
  4. Brush one side of each tortilla with olive oil. Place on a baking sheet oiled-side down.
  5. Add cheese, cooked beef, and more cheese to half of the tortilla; fold over.
  6. Bake for about 16 minutes until crispy and golden.
  7. Cool for 3 minutes before serving.
