Ingredients

  • 4 pounds pork butt
  • 1 onion, diced
  • 1 tablespoon chipotle chili powder
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 1 large orange (zest and juice)
  • 12 oz Blue Moon or similar wheat beer

Instructions

  1. Cut the pork butt into four even pieces and place them in the slow cooker.
  2. Add diced onion, chipotle chili powder, oregano, cumin, and salt over the pork.
  3. Zest and juice the orange into the slow cooker followed by pouring in the beer.
  4. Cover and cook on LOW for 7 to 8 hours or HIGH for 4 hours until fork-tender.
  5. Preheat your oven to BROIL. Transfer cooked pork to a sheet pan and shred it with two forks.
  6. Drizzle about 1/4 cup of cooking liquid over the shredded pork and broil for 5 to 6 minutes until crispy.
