Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, beat the softened butter with granulated and brown sugars until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually incorporate the dry mixture into the wet mixture. Fold in grated carrots and crushed pineapple gently.
  5. Spread the batter evenly in the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
