  • 5 pieces of bacon
  • 1 lb ground beef
  • 1/4 cup butter
  • 1/4 cup diced onion
  • 2 sticks diced celery
  • 1/2 teaspoon minced garlic
  • 6 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 lb Yukon potatoes (peeled & diced)
  • 2 cups shredded sharp cheddar cheese
  • Salt & pepper to taste
  • Optional: 1/4 cup diced pickles

Instructions

  1. In a large soup pot, cook bacon over medium-high heat until crispy (about 10 minutes). Transfer to paper towels.
  2. Brown ground beef in the same pot; drain excess fat and set aside.
  3. Sauté diced onion and celery in melted butter for 4-5 minutes until softened.
  4. Stir in minced garlic and flour; cook for about 2 minutes.
  5. Gradually whisk in chicken broth until smooth.
  6. Add heavy cream, Worcestershire sauce, diced potatoes, and return cooked beef to the pot. Bring to boil then reduce heat to simmer.
  7. Simmer for approximately 15 minutes or until potatoes are tender; stir occasionally.
  8. Turn off the heat; mix in shredded cheddar cheese gradually until melted.
  9. Stir in most of the reserved bacon (save some for garnish) and season with salt and pepper to taste.
