  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 1 cup sweet corn
  • 3 cloves garlic, minced
  • 2 cups mild roasted Hatch green chiles, chopped
  • 1 quart chicken stock
  • 3 cups cooked shredded chicken
  • 1 can (15 oz) cannellini beans, drained
  • Fresh cilantro, lime juice, avocado slices for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Spread corn tortilla slices on a baking sheet, drizzle with olive oil, and sprinkle with salt, sugar, and chili powder. Toss to coat.
  2. Bake tortillas for about 15 minutes until crispy, stirring halfway through.
  3. In a large pot over medium heat, warm olive oil and sauté onions, bell peppers, corn, and garlic for 5-6 minutes until softened.
  4. Add roasted Hatch chiles along with cumin, paprika, salt, and pepper; cook for another 3-4 minutes until fragrant.
  5. Stir in shredded chicken and chicken stock; let simmer for about 5 minutes.
  6. Blend cannellini beans with water and cilantro until smooth; add to chili pot and mix well.
  7. Adjust lime juice to taste before serving topped with avocado slices, cilantro, tortilla chips.
