  • 1 pound lean ground beef
  • 1/2 medium onion (chopped)
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 2 cups crushed Doritos (Nacho Cheese flavor)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 (12 ounce) can corn (drained)
  • 1 (15.5 ounce) jar salsa
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Preheat your oven to 350°F.
  2. Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned, about 5 minutes.
  3. Stir in chopped onion, chili powder, garlic powder, and cumin; cook for another 5 minutes.
  4. Spread crushed Doritos evenly in a 9×13 casserole dish.
  5. Spoon out excess fat from the skillet if necessary. Mix in black beans, corn, salsa, and half of the shredded cheese until warmed through.
  6. Layer the beef mixture over the Doritos.
  7. Sprinkle remaining cheese on top and bake uncovered for 15–20 minutes until melted and bubbly.
  8. Serve hot with optional toppings such as diced tomatoes or sour cream.
