Ingredients
- 2 tablespoons olive oil
- 1 pound ground turkey
- 1 small sweet onion
- 1 cup shredded carrots
- 3 garlic cloves
- 1 teaspoon fresh ginger
- ¼ cup chicken broth
- 1 small head cabbage (about 8 cups shredded)
- 3 tablespoons soy sauce or Tamari
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- 1 teaspoon toasted sesame oil
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 5–6 minutes.
- Push turkey to one side; add onion and remaining oil. Sauté for 3–4 minutes. Stir in carrots, garlic, and ginger for an additional 2 minutes.
- Pour in chicken broth; scrape brown bits from the pan. Add cabbage, soy sauce or Tamari, rice vinegar, salt, and pepper. Stir well.
- Cover and reduce heat to medium-low; cook for 12–15 minutes until cabbage is tender.
- Stir in toasted sesame oil before serving over cooked white rice if desired.
