Ingredients

  • Black beans (1 can, 15 ounces)
  • Canned corn kernels (1 ½ cups)
  • Jalapeño pepper (1 medium)
  • Red bell pepper (1 small)
  • Green onions (3)
  • Fresh cilantro (¼ cup)
  • Chili Cheese Fritos (9.75 ounces)
  • Sour cream (½ cup)
  • Mayonnaise (½ cup)
  • Fresh lime juice (¼ cup)
  • Chipotle sauce (2 tablespoons)

Instructions

  1. In a large bowl, combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Toss until evenly mixed.
  2. In a medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour the dressing over the salad mixture and add all but a handful of Fritos. Gently stir to combine.
  4. Just before serving, top with reserved Fritos for added crunch.
