  • 8 ounces bowtie pasta
  • 1 1/2 cups grape tomatoes
  • 1 seedless cucumber
  • 1 bell pepper
  • 1/2 small red onion
  • 1/2 cup Kalamata olives
  • 2/3 cup feta cheese
  • Fresh parsley

Instructions

  1. Cook the bowtie pasta according to package directions in salted water until al dente. Drain and rinse with cold water.
  2. Chop the grape tomatoes, cucumber, bell pepper, and red onion into bite-sized pieces and combine in a large bowl with Kalamata olives.
  3. In a jar, mix olive oil, water, red wine vinegar, lemon juice, honey, Dijon mustard, minced garlic, oregano, dill, mint, salt, and pepper. Shake until combined.
  4. Add cooled pasta to the vegetable mixture and gently fold in feta cheese and parsley.
