Ingredients
- 2 medium zucchinis
- 2 cups cherry tomatoes
- 8 oz (220g) pasta (fusilli recommended)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon fennel seeds
- 1/4 cup vegetable stock
- 1 cup grated parmesan
- Fresh basil or parsley
Instructions
- Cook the pasta in a large pot of boiling water according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat, add diced zucchini, and sauté until golden. Remove from skillet.
- In the same skillet, add cherry tomatoes, black pepper, fennel seeds, garlic powder, cayenne pepper (optional), and vegetable stock; cover and cook until tomatoes blister.
- Push tomatoes to one side of the pan; add cooked zucchini, pasta, and grated parmesan. Stir to combine and heat through.
- Serve immediately with extra olive oil and parmesan if desired.
