  • 2 medium zucchinis
  • 2 cups cherry tomatoes
  • 8 oz (220g) pasta (fusilli recommended)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon fennel seeds
  • 1/4 cup vegetable stock
  • 1 cup grated parmesan
  • Fresh basil or parsley

Instructions

  1. Cook the pasta in a large pot of boiling water according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat, add diced zucchini, and sauté until golden. Remove from skillet.
  3. In the same skillet, add cherry tomatoes, black pepper, fennel seeds, garlic powder, cayenne pepper (optional), and vegetable stock; cover and cook until tomatoes blister.
  4. Push tomatoes to one side of the pan; add cooked zucchini, pasta, and grated parmesan. Stir to combine and heat through.
  5. Serve immediately with extra olive oil and parmesan if desired.
