Ingredients

  • 1 medium yellow or white onion
  • 45 cloves garlic, peeled and chopped
  • 34 tbsp fresh horseradish, grated
  • 34 tbsp fresh ginger, grated
  • Raw apple cider vinegar (enough to fill the jar)
  • Optional: raw honey, cayenne pepper powder, citrus slices, herbs

Instructions

  1. Chop onion, garlic, horseradish, and ginger.
  2. Slice optional citrus and pack ingredients in a quart-sized glass jar until ¾ full.
  3. Pour raw apple cider vinegar over the ingredients until the jar is full.
  4. Seal the jar and store at room temperature for 3 to 4 weeks, shaking daily.
  5. After steeping, strain through cheesecloth or a mesh strainer and add raw honey and chili powder to taste.
  6. Transfer to bottles for storage.
