Ingredients
- 4 medium beets
- 4 large carrots
- 1 Tbsp olive oil

- 1 Tbsp butter
- 2 Tbsp honey

Instructions
- Preheat your oven to 450°F.
- Wash and peel the beets and carrots; chop them into even 1/2 inch pieces.
- Toss the chopped vegetables on a sheet pan with olive oil and sea salt until well coated.
- Roast for 20-25 minutes or until tender, checking for doneness.
- In a microwave-safe bowl, melt the butter and whisk in honey until combined.
