  • 1 package farfalle pasta (16 oz / 410g), uncooked
  • 1 cup fresh mozzarella cheese, cubed
  • 1 ½ cups black olives, pitted
  • 1 pint cherry tomatoes, cut in half
  • 2 tbsp fresh parsley, finely chopped
  • ½ red onion, diced
  • 1 green pepper, chopped
  • ½ cup salami, cut into quarters
  • ¾ cup extra virgin olive oil
  • ¼ cup white wine vinegar
  • 2 tsp lemon juice
  • 2 garlic cloves, minced
  • 3 tbsp Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook farfalle pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooled pasta with mozzarella cheese, black olives, halved cherry tomatoes, parsley, diced red onion, chopped green pepper, and salami.
  3. In a separate bowl, whisk together olive oil, white wine vinegar, lemon juice, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss until evenly coated.
  5. Refrigerate for at least one hour before serving to enhance flavors.
