  • 1 cup cooked quinoa
  • 1 cup canned chickpeas
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 1/3 cup pepitas
  • 1/3 cup golden raisins
  • 1/3 cup crumbled feta cheese
  • Fresh dill and parsley for garnish

Instructions

  1. Rinse the kale under cold water and dry it thoroughly. Chop into bite-sized pieces.
  2. In a large bowl, drizzle olive oil over the kale, sprinkle with salt, and massage until tender (about 1-2 minutes). Let sit for 10 minutes.
  3. Add cooked quinoa, chickpeas, red onion, cucumber, pepitas, golden raisins, feta cheese, dill, and parsley to the bowl.
  4. Prepare lemon dressing in a separate container and pour it over the salad mixture. Toss gently until well combined.
  5. Serve immediately or store in an airtight container in the refrigerator for up to four days.
