- 1 pound kielbasa, cut into ½ inch pieces
- 2 cups heavy cream (or whole milk)
- 2 cups shredded cheddar cheese
- ½ cup shredded parmesan cheese
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- ½ cup yellow onion, finely diced
- ½ cup carrots, finely diced
- ½ cup celery, finely sliced
- 1 ½ pounds potatoes, cubed
- 4 cups chicken stock
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the kielbasa pieces and cook until browned (about 5-6 minutes). Remove and set aside.
- In the same pot, sauté garlic, onions, carrots, and celery for about 2 minutes until fragrant.
- Pour in the chicken stock and add the cubed potatoes. Bring to a boil, then reduce heat and cover. Cook for approximately 15 minutes or until potatoes are tender.
- Return the cooked kielbasa to the pot. Stir in cream, cheddar cheese, parmesan cheese, salt, and pepper. Cook on low heat for another 5-10 minutes until the cheese melts.
- Stir in chopped parsley before serving hot.
