  • 1 pound kielbasa, cut into ½ inch pieces
  • 2 cups heavy cream (or whole milk)
  • 2 cups shredded cheddar cheese
  • ½ cup shredded parmesan cheese
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • ½ cup yellow onion, finely diced
  • ½ cup carrots, finely diced
  • ½ cup celery, finely sliced
  • 1 ½ pounds potatoes, cubed
  • 4 cups chicken stock
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the kielbasa pieces and cook until browned (about 5-6 minutes). Remove and set aside.
  2. In the same pot, sauté garlic, onions, carrots, and celery for about 2 minutes until fragrant.
  3. Pour in the chicken stock and add the cubed potatoes. Bring to a boil, then reduce heat and cover. Cook for approximately 15 minutes or until potatoes are tender.
  4. Return the cooked kielbasa to the pot. Stir in cream, cheddar cheese, parmesan cheese, salt, and pepper. Cook on low heat for another 5-10 minutes until the cheese melts.
  5. Stir in chopped parsley before serving hot.
