Instructions

  3. In another bowl, combine milk, vegetable oil, egg, vanilla extract, lemon juice, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in one cup of blueberries.
  5. Pour the batter into the prepared pan and top with remaining blueberries.
  6. Bake for about 55 minutes or until golden brown; allow to cool before drizzling with glaze made from icing sugar and lemon juice.
