- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- In another bowl, combine milk, vegetable oil, egg, vanilla extract, lemon juice, and lemon zest.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in one cup of blueberries.
- Pour the batter into the prepared pan and top with remaining blueberries.
- Bake for about 55 minutes or until golden brown; allow to cool before drizzling with glaze made from icing sugar and lemon juice.
