  • 1 (750-ml) bottle vodka
  • 3 1/2 cups water
  • 2 1/2 cups sugar

Instructions

  1. Peel the lemons using a vegetable peeler to remove long strips of zest, avoiding the pith.
  2. Trim any remaining white pith from the peels.
  3. Combine lemon peels and vodka in a pitcher; cover and let steep at room temperature for 4 days.
  4. Create a sugar syrup by dissolving sugar in water over medium heat; allow to cool completely.
  5. Mix the cooled syrup with the infused vodka; cover and let sit overnight.
  6. Strain out lemon peels using a mesh strainer; bottle your limoncello and refrigerate until chilled.
