Ingredients
- 6 ears of corn (husked and silk removed)
- Olive oil
- 1–2 teaspoons chipotle chili powder
- ¼ – â…“ cup cotija cheese (crumbled)
- ¼ cup fresh parsley (finely chopped)
- Sea salt
- 2 limes (juiced)
- ½ cup heavy cream
- 1 tablespoon sour cream
- â…› teaspoon chipotle chili powder
- â…› teaspoon salt
Instructions
- Preheat grill to medium heat.
- Brush each ear of corn with olive oil and sprinkle with sea salt. Wrap in aluminum foil.
- Grill corn for 15-20 minutes, turning occasionally until tender.
- While corn grills, mix heavy cream, sour cream, lime juice, chipotle powder, and salt in a bowl until smooth.
- Remove corn from grill and unwrap. Brush with crema and sprinkle with cotija cheese, parsley, and additional lime juice before serving.
