  • 6 ears of corn (husked and silk removed)
  • Olive oil
  • 12 teaspoons chipotle chili powder
  • ¼⅓ cup cotija cheese (crumbled)
  • ¼ cup fresh parsley (finely chopped)
  • Sea salt
  • 2 limes (juiced)
  • ½ cup heavy cream
  • 1 tablespoon sour cream
  • â…› teaspoon chipotle chili powder
  • â…› teaspoon salt

Instructions

  1. Preheat grill to medium heat.
  2. Brush each ear of corn with olive oil and sprinkle with sea salt. Wrap in aluminum foil.
  3. Grill corn for 15-20 minutes, turning occasionally until tender.
  4. While corn grills, mix heavy cream, sour cream, lime juice, chipotle powder, and salt in a bowl until smooth.
  5. Remove corn from grill and unwrap. Brush with crema and sprinkle with cotija cheese, parsley, and additional lime juice before serving.
