  • 1 cup all-purpose flour
  • 1 cup plus 1/3 cup rolled oats
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt (optional)
  • 2/3 cup unsalted butter (melted and cooled)
  • 2 cups peaches (peeled and diced)
  • 2 tablespoons granulated sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon almond extract

Instructions

  1. Preheat oven to 350°F (177°C). Grease an 8-inch square dish and line it with parchment paper.
  2. In a bowl, toss chopped peaches with lemon juice, almond extract, cornstarch, and sugar. Set aside.
  3. In a medium bowl, mix flour, oats, sugar, cinnamon, and salt; stir in melted butter until combined.
  4. Press two-thirds of the mixture into the lined dish as the crust layer.
  5. Spread peach mixture over the crust.
  6. Sprinkle remaining crust mixture over the peaches; press down lightly.
  7. Bake for about 33–35 minutes until golden brown. Cool for one hour at room temperature and then refrigerate for another hour before slicing.
