  • 1 tablespoon unsalted butter (cold)
  • 6 teaspoons light brown sugar
  • 3 fresh peaches
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup granulated sugar
  • 1/3 cup unsalted butter (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk (room temperature)

Instructions

  1. Preheat your oven to 350°F (177°C) and spray a non-stick muffin pan.
  2. For the topping, cut cold butter into small pieces and place one in each muffin cup along with light brown sugar. Slice peaches and arrange them at the bottom of each cup.
  3. Dice remaining peaches for the batter. In a bowl, mix flour, baking powder, baking soda, and salt.
  4. In another bowl, beat room temperature butter and granulated sugar until fluffy. Add egg and vanilla; mix well.
  5. Gradually add half the flour mixture, followed by buttermilk, then the rest of the flour mixture—gently fold in diced peaches.
  6. Divide batter into muffin cups and bake for about 25–30 minutes or until a toothpick comes out clean.
