Ingredients
- 1 pound of pasta (cavatelli or penne)
- 1 cup halved cherry tomatoes
- 8 oz fresh mozzarella, diced
- 1/2 cup finely chopped red onion
- 1/4 cup chopped pepperoncini
- 1/4 cup finely chopped parsley
- For the basil pesto: 3 cups basil leaves
- 1/2 cup olive oil
- 1/3 cup pine nuts
- 1/3 cup grated parmesan cheese
- 1 tablespoon lemon juice
- 2 cloves garlic

Instructions
- Cook the pasta in salted boiling water until tender; drain and rinse under cold water.
- In a food processor, blend basil leaves, pine nuts, parmesan cheese, olive oil, garlic, lemon juice, salt, and pepper until smooth.
- In a large mixing bowl, combine cooled pasta with pesto, cherry tomatoes, mozzarella, pepperoncini, and parsley; toss well.
