  • 1 quart white vinegar
  • 1 quart water
  • 1/2 cup pickling salt
  • 1 tsp dill seed
  • 1 pod red pepper or 1/8 tsp cayenne pepper
  • 3 garlic cloves
  • Fresh okra

Instructions

  1. In a large pot, combine vinegar, water, and pickling salt; bring to a boil.
  2. Thoroughly wash the okra and set aside.
  3. Prepare your canner by filling it with water and bringing it to a low simmer; warm empty jars inside.
  4. Clean lids and bands in warm soapy water.
  5. Remove a jar from the canner; add dill seed, red pepper (or cayenne), and garlic.
  6. Pack the okra tightly into the jar, then pour in boiling brine until filled, leaving 1/2 inch headspace.
  7. Remove air bubbles, clean the rim, then seal with lids and bands.
  8. Return jars to the canner; process for about 15 minutes in boiling water.
  9. Allow jars to cool completely on a towel or rack and check seals after 24 hours.
