  • 6 boneless pork loin chops (1 inch thick)
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup pineapple juice
  • 1/4 cup barbecue sauce
  • 1/4 cup brown sugar
  • 1 teaspoon sea salt
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onions
  • 1 cup pineapple tidbits (for garnish)

Instructions

  1. Season pork chops with salt and pepper on both sides.
  2. In a mixing bowl, combine pineapple juice, barbecue sauce, brown sugar, sea salt, ground ginger, garlic powder, and dried minced onions.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear the seasoned pork chops for about 2 minutes per side until golden brown.
  4. Remove the pork chops and cover with foil to keep warm.
  5. Pour the prepared sauce into the skillet, deglazing the pan. Bring to a boil then reduce heat to medium.
  6. Return the pork chops to the skillet and simmer for 8 to 10 minutes until they reach an internal temperature of at least 145 degrees Fahrenheit.
  7. Stir in pineapple tidbits before serving.
