  • 1/3 cup melted butter or coconut oil

  • 3 large eggs
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free all-purpose baking flour
  • 1 cup blanched almond flour
  • 1/2 cup vanilla protein powder
  • 3 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Optional: 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Prepare a 9×5 loaf pan by spraying and lining it with parchment paper.
  3. Puree bananas until smooth; add to a mixing bowl.
  4. Whisk in melted butter, sugar, eggs, Greek yogurt, and vanilla until combined.
  5. Gradually mix in gluten-free flour, almond flour, protein powder, baking powder, cinnamon, and salt until smooth.
  6. Fold in chocolate chips if using.
  7. Pour batter into the prepared pan and bake for 55–65 minutes or until a toothpick comes out clean.
  8. Allow to cool for at least an hour before slicing.
