  • 9 Tbsp unsalted butter
  • 1 cup sugar
  • Zest of 1 lemon
  • 3 large eggs (separated)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup plain Greek yogurt
  • 1 1/2 cups raspberries
  • For Frosting: 1 cup unsalted butter, 5 cups confectioner's sugar, 4 Tbsp fresh lemon juice

Instructions

  1. Preheat oven to 350°F and prepare two non-stick 8-inch cake pans with parchment paper.
  2. Cream together the butter, sugar, and lemon zest until light and fluffy.
  3. Beat in egg yolks one at a time, followed by the vanilla extract.
  4. Whip egg whites separately until soft peaks form.
  5. In another bowl, combine flour, baking powder, salt, and baking soda.
  6. Gradually mix dry ingredients with the creamed mixture alternately with yogurt.
  7. Gently fold in whipped egg whites and raspberries until evenly distributed.
  8. Divide batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  9. Cool cakes in pans for 10 minutes before transferring to a wire rack to cool completely.
  10. For frosting, beat together butter and confectioner's sugar; gradually add lemon juice until smooth.
