- 6–8 ripe large peaches (about 3 pounds)
- 1/2 cup granulated sugar (for peach puree)
- 1 tablespoon fresh lemon juice (for peach puree)
- 1 1/2 cups freshly squeezed lemon juice (from 8–10 medium lemons)
- 1 cup granulated sugar (for simple syrup)
- 4–6 cups cold water (for dilution)
- Ice cubes
- Fresh peach slices and mint sprigs for garnish
Instructions
- In a medium saucepan, combine diced peaches, sugar, water, and lemon juice. Simmer over medium-low heat for 10-15 minutes until soft.
- Mash the peaches and strain through a fine-mesh sieve into a bowl to create a smooth puree. Allow it to cool.
- For the simple syrup, heat sugar and water in a small saucepan until dissolved; cool completely.
- Juice the lemons and strain out seeds/pulp.
- In a large pitcher, combine the cooled simple syrup and strained lemon juice; stir well.
- Add the cooled peach puree and mix thoroughly. Gradually stir in cold water to taste.
- Chill for at least 30 minutes before serving over ice with garnishes.
