Ingredients
- 1 lb large sea scallops (dry-packed)
- Salt and freshly ground black pepper
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- Optional: 1/4 tsp cayenne pepper
- 1/4 cup grated Parmesan cheese
- 1 tsp lemon juice
Instructions
- Pat scallops dry and season with salt and pepper. Let rest for 15–20 minutes.
- Heat olive oil and 1 tablespoon of butter in a cast iron skillet over medium-high heat. Sear scallops for 2–3 minutes until golden brown, then flip and cook for another 1–2 minutes. Remove from the skillet.
- In the same pan, reduce heat to medium and add remaining butter and minced garlic. Sauté for about 30 seconds.
- Deglaze the pan with a splash of white wine or seafood broth. Add heavy cream, Cajun seasoning, smoked paprika, and optional cayenne; simmer until thickened.
- Stir in Parmesan cheese and lemon juice, then return scallops to the pan to warm through before serving.
