Ingredients

  • 1 lb large sea scallops (dry-packed)
  • Salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Optional: 1/4 tsp cayenne pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tsp lemon juice

Instructions

  1. Pat scallops dry and season with salt and pepper. Let rest for 15–20 minutes.
  2. Heat olive oil and 1 tablespoon of butter in a cast iron skillet over medium-high heat. Sear scallops for 2–3 minutes until golden brown, then flip and cook for another 1–2 minutes. Remove from the skillet.
  3. In the same pan, reduce heat to medium and add remaining butter and minced garlic. Sauté for about 30 seconds.
  4. Deglaze the pan with a splash of white wine or seafood broth. Add heavy cream, Cajun seasoning, smoked paprika, and optional cayenne; simmer until thickened.
  5. Stir in Parmesan cheese and lemon juice, then return scallops to the pan to warm through before serving.
