Ingredients
- 3 cups uncooked fusilli pasta
- 1 pound shrimp (31-40/pound size), thawed and peeled
- 2 sticks celery, chopped
- 2 tablespoons red onion, chopped
- 1/2 cup mayo
- 1 tablespoon lemon juice + zest of 1 lemon
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
Instructions
- Cook the fusilli pasta in salted boiling water until al dente. Drain and rinse under cool water.
- In a separate pot, boil shrimp for 2-3 minutes until pink. Drain and place in an ice bath before patting dry.
- Chop celery and red onion; add to a large mixing bowl with the drained pasta.
- For the dressing, mix mayo, Dijon mustard, lemon juice, zest, garlic powder, dill, olive oil, salt, and pepper until smooth.
- Combine shrimp with pasta mixture and toss with dressing until well-coated. Adjust seasoning if needed.
- Chill in the refrigerator for at least one hour before serving.
