Ingredients
- 1 pound large shrimp (deveined and shelled)
- 12 ounces dried spaghetti or linguine
- 1 cup shredded low-moisture mozzarella cheese
- 1/2 cup dry white wine or low-sodium chicken broth
- 4 tablespoons unsalted butter
- Juice and zest from 1 lemon
- 5 cloves fresh garlic (minced)
- 1/4 cup chopped Italian flat-leaf parsley
- Salt and pepper to taste
Instructions
- Cook pasta in salted boiling water until just shy of al dente. Drain and set aside.
- Sear shrimp in olive oil with salt and pepper until opaque. Remove from skillet.
- In the same skillet, sauté garlic with remaining butter, then add wine (or broth), lemon juice, and zest. Simmer briefly.
- Toss cooked pasta in the skillet with the sauce, then fold in shrimp, half the parsley, and half the Parmesan cheese.
- Transfer mixture to a greased baking dish, top with mozzarella and remaining Parmesan.
- Bake at 375°F for 15 minutes until cheese is melted and golden.
- Garnish with parsley before serving hot.
