Ingredients
- 2–2.5 lbs skinless boneless chicken breast
- 16 oz chunky salsa
- 1/3 cup BRIANNAS Cilantro Lime Dressing
- 1/2 cup chicken broth
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 4 cups cooked rice
- 2 cups frozen sweet corn
- 1 can (16 oz) low-sodium black beans
- 3 small avocados
- Juice of 1 lime
Instructions
- Place chicken in the slow cooker with salsa, dressing, broth, chili powder, cumin, and smoked paprika. Mix well.
- Cook on high for 4 hours until the chicken is tender.
- Shred the chicken in the slow cooker using two forks and let sit for an additional 10 minutes.
- While the chicken cooks, prepare rice, heat corn and beans, chop cilantro, dice avocados, and cut lime into wedges.
- In serving bowls, layer rice first followed by shredded chicken, corn, beans, avocado, cilantro, and lime wedges. Drizzle with extra dressing before serving.
