  • 22.5 lbs skinless boneless chicken breast
  • 16 oz chunky salsa
  • 1/3 cup BRIANNAS Cilantro Lime Dressing
  • 1/2 cup chicken broth
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 4 cups cooked rice
  • 2 cups frozen sweet corn
  • 1 can (16 oz) low-sodium black beans
  • 3 small avocados
  • Juice of 1 lime

Instructions

  1. Place chicken in the slow cooker with salsa, dressing, broth, chili powder, cumin, and smoked paprika. Mix well.
  2. Cook on high for 4 hours until the chicken is tender.
  3. Shred the chicken in the slow cooker using two forks and let sit for an additional 10 minutes.
  4. While the chicken cooks, prepare rice, heat corn and beans, chop cilantro, dice avocados, and cut lime into wedges.
  5. In serving bowls, layer rice first followed by shredded chicken, corn, beans, avocado, cilantro, and lime wedges. Drizzle with extra dressing before serving.
