  • ¼ cup non-dairy or regular dairy milk (warmed to 110℉)
  • 1 ½ teaspoons instant yeast
  • 2 teaspoons granulated sugar
  • 2 cups + 1 Tablespoon all-purpose flour
  • 200 grams (about ¾ cup) sourdough discard (unfed, at room temperature)
  • 1 egg (lightly beaten)
  • 2 Tablespoons unsalted butter (melted)
  • Fresh herbs (parsley or rosemary)
  • Garlic powder
  • Kosher salt
  • Flaky sea salt (for topping)

Instructions

  1. In a stand mixer bowl, combine warmed milk, instant yeast, and sugar. Add flour, sourdough discard, beaten egg, chopped herbs, kosher salt, garlic powder, and melted butter.
  2. Mix on low speed until a shaggy dough forms. Transfer to a work surface and knead for 3-4 minutes until smooth.
  3. Place in a greased bowl and cover; let rise for 60-90 minutes until doubled in size.
  4. Prepare the topping by mixing softened butter with herbs and garlic powder; reserve one tablespoon for later.
  5. Divide the risen dough into twelve pieces and flatten each into circles. Spread topping mixture on each piece before folding.
  6. Place folded pieces in a greased loaf pan with folds facing down; cover and allow to rise for another 30-45 minutes.
  7. Preheat oven to 350℉. Bake for about 30 minutes; cover with foil and bake an additional 5–10 minutes until golden brown.
