  • 2 pounds yellow squash (sliced)
  • 1/4 cup butter
  • 1/2 cup diced onion
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 large egg (beaten)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup butter crackers (finely crushed)

Instructions

  1. In a large pan over medium heat, melt 1 tablespoon of butter and sauté the diced onion until soft (7-8 minutes).
  2. Add sliced yellow squash to the pan and cook for 10-12 minutes, stirring frequently.
  3. Drain excess moisture by pouring the mixture into a colander.
  4. In a mixing bowl, combine drained squash mixture with garlic powder, salt, pepper, sour cream, beaten egg, cheddar cheese, and 1/4 cup Parmesan.
  5. Mix crushed crackers with melted butter and remaining Parmesan in another bowl.
  6. Spread the squash mixture into a greased baking dish and top with the cracker mixture.
  7. Bake at 350°F for 25 minutes until golden brown.
