Ingredients

  • 2 bunches of kale
  • 34 fresh peaches
  • 1 cup blueberries
  • 1/4 cup pepitas
  • 4 lemons (for vinaigrette)
  • 2 Tbsp + 2 tsp honey
  • Olive oil
  • Cracked black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Spread pepitas on the baking sheet and toast for 5–6 minutes until golden. Set aside to cool.
  3. In a small bowl or jar, whisk together lemon juice, honey, olive oil, and cracked black pepper; refrigerate.
  4. Remove kale leaves from stems and chop; massage with olive oil and lemon juice for about 5 minutes.
  5. Add diced peaches and washed blueberries to the kale.
  6. Drizzle vinaigrette over the salad; toss to coat evenly.
  7. Serve topped with toasted pepitas.
