  • 30 g Maple Syrup
  • 10 g Salt
  • 50 g Roasted Pumpkin (for filling)
  • 100 g Brown Sugar (for filling)
  • 1 tsp Cinnamon (for filling)
  • 60 g Crushed Pecans (for filling)

Instructions

  1. Start the sourdough process early in the day to allow dough to rise.
  2. In a large bowl, combine the sourdough starter, roasted pumpkin, white bread flour, warm water, maple syrup, salt, turmeric, and cinnamon until mixed.
  3. Knead the dough until smooth (5-10 minutes), then let rest for 45 minutes.
  4. Incorporate salt into the dough and let it rest again for an additional 30 minutes.
  5. Stretch and fold the dough before mixing in the filling ingredients.
  6. Shape the dough into a round loaf and place in a floured proofing basket. Cover and refrigerate overnight.
  7. Preheat your Dutch oven to 450°F (232°C) while shaping your loaf for baking.
