- 1 lb ground beef
- 1 packet taco seasoning
- 3/4 cup water
- 2 cups salsa
- 4 large flour tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 1 cup sour cream
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Stir in taco seasoning and water; simmer for about 5 minutes until thickened.
- Mix in salsa; cook for another 2 minutes.
- In a bowl, combine black beans and corn.
- Grease a baking dish and start layering: beef mixture, tortilla, bean mixture, cheese. Repeat until all ingredients are used, finishing with cheese on top.
- Cover with foil and bake for 25–30 minutes; remove foil and bake an additional 10 minutes until the cheese is bubbly.
