Ingredients
- 2 lbs. chicken thighs (cut into 1" cubes)
- 2 tbsp cornstarch
- 1 cup water
- 1/3 cup brown sugar
- 1/3 cup low-sodium soy sauce
- 2 cloves garlic (minced)
- 1 tbsp rice vinegar
- 1/2 tbsp fresh ginger (minced)
- 1 tbsp honey
- 1/2 tsp sesame oil
- Sesame seeds and chopped green onion for garnish
Instructions
- Prepare the teriyaki sauce by combining cornstarch and water in a small bowl. In a saucepan, mix remaining ingredients, add the cornstarch mixture, bring to simmer until thickened, then cool.
- Marinate cubed chicken in half of the cooled sauce in a ziplock bag for at least 30 minutes.
- Preheat grill to medium heat; thread marinated chicken onto skewers.
- Grill skewers for about 20–30 minutes, turning every few minutes and basting with reserved sauce until fully cooked (internal temperature should reach 165°F).
- Serve immediately topped with sesame seeds and green onions.
