- 2 tbsp freshly-squeezed lemon or lime juice
- 3/4 cup white granulated sugar
- 1/4 cup + 1 tbsp tapioca starch
- 1 tsp vanilla extract
- 1 tsp smoked paprika (or regular paprika)
- 1 tbsp unsalted butter (for topping)
- 1 egg yolk + 1 tbsp milk (for egg wash)
Instructions
- Prepare the pie crust ahead of time using your favorite recipe.
- Peel and cube the peaches into 1-inch pieces.
