  • 10 fresh basil leaves, chopped
  • 1/2 cup green onion, chopped
  • 1 pre-baked 9-inch pie crust
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3/4 cup mayonnaise (or half mayo and half Greek yogurt)
  • 2 tablespoons grated Parmesan cheese
  • Salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Layer tomato slices in a colander, sprinkle with salt, and let rest for 10 minutes to draw out moisture.
  3. Pat dry the tomatoes with paper towels.
  4. In the pre-baked pie crust, layer the tomatoes, basil, green onions, and season with salt and pepper.
  5. In a bowl, mix mozzarella cheese, cheddar cheese, and mayonnaise until well blended.
  6. Spread the cheese mixture over the layered ingredients and sprinkle with Parmesan.
