  • 4 green onions, thinly sliced
  • 1/3 cup chopped green bell pepper
  • 1/3 cup chopped red bell pepper
  • 2 tablespoons butter
  • 4 ounces smoked ham, chopped (divided)
  • 1 1/2 cups shredded Colby Jack or cheddar cheese (divided)
  • 1 cup heavy cream
  • 6 large eggs
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground mustard

Instructions

  1. Preheat oven to 375°F. Prick the bottom of the pie shell with a fork and bake for 5 minutes.
  2. In a skillet, melt butter over medium heat and sauté green onions and bell peppers until softened.
  3. Layer half of the ham and cheese in the par-baked shell.
  4. In a bowl, whisk together heavy cream, eggs, and seasonings; stir in sautéed vegetables.
  5. Pour half of the custard mixture into the shell; repeat layering with remaining ham, cheese, and custard.
  6. Bake on a baking sheet for 10 minutes; then lower temperature to 350°F and bake for an additional 30-40 minutes until set.
  7. Cool for at least 20 minutes before slicing.
