  • 1 cup heavy whipping cream

  • 6 slices bacon, crumbled

Instructions

  1. In a large stockpot over medium-high heat, cook the sausage until browned. Break it into small pieces as it cooks.
  2. Use a slotted spoon to transfer the cooked sausage to a plate, reserving 1 tablespoon of grease in the pot. Discard excess grease.
  3. Sauté onions in the reserved grease for about 5 minutes until softened; add minced garlic and sauté for an additional minute.
  4. Add diced potatoes and chicken stock along with the cooked sausage back into the pot. Bring to a simmer and cook for about 10 minutes until potatoes are tender.
  5. Stir in chopped kale and heavy cream; simmer for an additional 5 minutes until heated through. Season with salt and pepper before serving topped with bacon.
